On episode 8 of ‘Sup Moms? Podcast, we are sharing 6 of our favorite, easy weeknight meals for our families. These are links to where we found the recipes because, let’s face it, we don’t have time to create recipes. Shoutout to those who can but if you’re looking for a one place to find some super easy recipes that are delicious and can be done with a baby in a bouncer and a toddler playing with a puzzle.

Also, check out the episode for a crazy story about an encounter at a certain athletic retailer, how we meal plan and an epic tantrum over getting dressed!

Megan’s Recipes:

  1. Loaded Taco Sweet Potato Sliders by Paleo Running Mama (Prep ahead: slice sweet potatoes. Shortcuts: use pre-seasoned turkey/meat, use pre-made guac or avocado slices)
  2. Extra Crispy Oven-Fried “Paul” Chicken Thighs by Craving Tasty (Only need a couple ingredients that you probably already have. Eat it with or without sauce. Huge plus: chicken thighs are inexpensive.)
  3. Slow Cooker Buffalo Chicken by Cascade Crews (Ultimate “set it and forget it” recipe. Warning: it is a bit spicy/hot!)

    BONUS: Greek Turkey Burgers

Jess’ Recipes:

  1. Skinny Enchilada Bake by Kim’s Cravings
  2. Baked Chicken Parmesan by Skinnytaste
  3. Trader Joe’s frozen vegetable rice with pre-made roasted sweet potatoes & a fried egg (super quick lunch)
  4. Skinnytaste

BONUS: Sweet Potato Taco Skillet by The Healthy Consultant
